Ingredients
- 200g suran or elephant yam
- 2 cups water
- 1 tbsp oil
- 1 tbsp lemon juice
- 50g peanuts, coarsely ground
- 2 tsp desiccated coconut
- ½ tsp sesame seeds
- 1 inch cinnamon stick
- 2 cloves
- Salt to taste
- Sugar as required (optional)
- Coriander leaves as required
Method
- To prepare this wholesome Gujarati khichdi at home, start by applying oil to your palms to avoid an itchy feeling. While handling jimikand, peel the piece of suran and peel its skin. Grate the yam and soak the grated pieces in a bowl of water till we use it again for the cooker.
- Now, in a kadhai, add some oil and heat until hot enough, add cumin seeds and sesame seeds and wait for them to crackle for a few seconds. Now, add chopped green chillies along with pounded peanuts. Toss the peanuts until golden and ensure you’re not burning it.
- Add grated yam and salt. Mix everything and allow it to cook uncovered for 6-8 minutes. Stir ground cinnamon and cloves into the mixture and combine evenly. For all the Gujarati lovers, incorporating sugar has always been a must. Turn the flame off.
- Drizzle lemon juice and mix everything thoroughly. This step will also prevent the itchy feeling when you eat it and overall makes the khichdi delicious and wholesome.
