​Gujarati Style Khatta Urad Dal With Steamed Rice For Indulging Lunch​

1 cup urad dal, 2.5 cups water, 1 tbsp besan, 3 tbsp dahi, salt as required, pinch of haldi powder, coriander jeera powder

​Step 1​

To prepare this delightful Gujarati delicacy at home, start by rinsing 1 cup of urad dal until the water runs clear. Add it to a pressure cooker with 2.5 cups of water. Cook for three whistles, after the first one, lower the flame. Once done, allow the pressure to release naturally. This process will soften the dal, giving your dish that melt-in-your-mouth texture.

​Step 2​

While the dal is cooking, make the flavourful base. In a bowl, whisk together 1 heaped tbsp of besan with 3 tbsp of sour curd. Add salt, a pinch of haldi, red chilli powder, and dhaniya-jeera powder. Mix until smooth, with no lumps. Then stir in 2 cups of water. This creamy, tangy blend brings the whole dish to life.

​Step 3​

For that extra punch of flavour, heat a little oil in a small pan. Add cumin seeds and let them crackle. Toss in crushed garlic and sauté until golden. Then throw in some fresh curry leaves for just 30 seconds. Turn off the heat and pour this sizzling tadka straight into your dahi-besan mix.

​Step 4​

Now that the dal is cooked and your mix is ready, gently pour the dahi-besan-tadka mixture into the dal. Give it a good stir. Taste and add more salt if needed. Heat on a medium flame and allow it to come to a gentle boil. As soon as it bubbles, turn off the gas. Don’t overcook, it helps keep the curd from splitting.

​Step 5 ​

Give the dish a taste, if it needs a bit more tang, a squeeze of lemon will do the trick. Sprinkle some fresh coriander leaves on top for a pop of colour and freshness. Serve your khatta urad hot with rice or roti and enjoy!
