Step 1

To prepare this delightful raw jackfruit kebab at home, start by chopping 250g of raw jackfruit into medium-sized pieces. Add them into a pressure cooker with a splash of water and a pinch of salt. Allow it to cook for three whistles. Once the pressure releases naturally, drain any leftover water and set the jackfruit aside to cool.

Step 2

While the jackfruit cools, dry roast 4 tablespoons of besan (gram flour) in a pan over medium heat until it smells nutty and turns golden. Set it aside to cool. Then, mash the cooled jackfruit either with your hands or a blender until soft and pulpy. It should come together like a soft dough that holds its shape.
