Ingredients
  • 1 ½ cup soaked chana dal
  • 3 green chillies
  • 3 garlic cloves
  • 2-inch ginger
  • ¼ tsp turmeric powder
  • ¼ tsp asafoetida
  • 2 tbsp sugar
  • 2 tsp salt
  • 1 tsp Eno
  • ¾ cup water
For the tempering
  • ½ cup peanut oil
  • 1 tbsp mustard seeds
  • 8 fresh curry leaves
  • 8 green chillies
  • 6 garlic cloves
  • ¼ tsp turmeric powder
  • ¼ tsp asafoetida
  • 1 tsp salt
  • 2 tbsp lime juice
  • 2 tbsp sugar
  • ¼ cup chopped cashews
  • ¼ cup lime juice
  • ½ cup water
For garnishing
  • ½ cup coriander leaves, chopped
  • ¼ cup coconut, grated
  • ½ cup pomegranate seeds
  • 1 cup nylon sev
Method
  • To prepare this delightful Gujarati dish at home, start by washing the chana dal 3-4 times or until the water runs clear. Soak it for about 6-8 hours, and once done, drain the lentils.
  • Now, place soaked lentils in a food processor along with green chillies, garlic cloves and ginger root. Add water in batches and add ¼ cup at a time while keeping it thick. Once processed, add sugar, lime juice, salt and asafoetida.
  • Once the batter becomes light and runny, add in Eno and whisk again. As soon as the batter is fluffy and ready, pour it into the steamer and cover the steamer for about 20 minutes. After steaming, poke a knife and take the mixture out of the steamer, and the khaman is ready.
  • Now, crumble the khaman and ensure that it does not get mushy, nor remains too thick or lumpy. It should be grainy to handle. For the tempering, process green chillies, garlic cloves and ginger. Keep it aside and in a deep pot, heat peanut oil and add in mustard seeds.
  • Allow the seeds to pop and toss in turmeric powder along with asafoetida. Mix well and simmer the mixture. Once the mixture starts simmering, add salt, lime juice, and sugar.
  • Mix in chopped cashews and golden raisins. Add in the crumbled khaman and gently mix everything together without making it mushy. Add water and mix the khaman evenly. Allow the mixture to cook for about 2-3 minutes, serve immediately and enjoy!
